BASIL


Two species of this potherb arc generally known, sweet and bush basil. They are nearly allied to the mint (Mentha) family and their scientific name is Ocymum. The sweet basil grows about 12 in. high, and is densely covered with small oval leaves. The little white flowers appear in early summer and are borne in long clusters. The bush basil grows about half the size, forming a roundish bush. Both plants are highly aromatic. They are annuals and arc easily grown from seed in spring. They like a light, sandy, friable soil. The tips of the leaves are used to impart their distinctive clove flavor to soups and salads, and are also used for seasoning. By cutting down one or two plants as soon as they come into bloom, and drying the leaves slowly in the shade, the leaves can be used in the winter. A form of bush basil is sometimes grown as a pot plant for a greenhouse or window. It bears shining green leaves, and pale pink flowers.
